#Paleo Baked Tilapia

Ingredients:

·       EVOO

·       Fresh flat leaf parsley sprigs

·       Lemon, very thinly sliced

·       White wine (It’s such a small amount and basically bakes off)

·       Sea Salt & Fresh Black Pepper

To make:

Preheat the oven to 350°.

Lay parchment paper on a baking sheet.

Place thinly sliced lemons at one end of the parchment paper, creating a layer.

Lay sprigs of flat leaf parsley, EVOO and a few dashes of white wine over the lemons.

Season the Tilapia with a small amount of sea salt and fresh black pepper and place over the lemons.

Fold the parchment paper over the Tilapia, tucking in the sides to create an enclosed bag, so it bakes in the steam.

Let it bake for about 20 mins, or until it is white and flakes off with a fork.   Check in on it every now and then. :)
