Holy Kale! Grill it or Bake it….

                                        Spicy Cayenne Peppered Kale


Need:  A grill or oven, baking sheet and cooling rack (if you have one)

Ingredients:

Cayenne pepper - start with about 1/4 - 1/2 tsp    IT IS SPICY  :)

Coarse salt, to sprinkle

Garlic powder, to sprinkle

EVOO

Make:

In the Oven:  Take the clean, dry kale and remove it from stem into small bite size pieces.  Place it into a large bowl.  Add enough EVOO so that the kale is lightly covered.  Sprinkle garlic powder and cayenne pepper into the bowl.  Mix thoroughly.

Place the cooling racks over the baking sheets and spread the kale out over it.  (The cooling racks let the heat circulate underneath the kale to keep it from getting soggy.  Also, you don’t need to flip it)

Sprinkle lightly with salt and place into the oven for about 12-15 minutes @ 350°.  Make sure to check the kale around 10 minutes so it doesn’t burn.

Let it cool, then place into a bowl and ENJOY!

THE RESULT…..

On the Grill:  Leave it on the stem and flavor it (same as above) in single whole pieces.  You can crumble it later.  Each piece can then be layed on the top grilling shelf or away from direct heat.  Watch carefully as time will depend on heat of the grill!

TIPS:

  • I use a spray bottle for the EVOO to control the amount used.  
  • Instead of using a bowl and mixing, the kale can be layed out and flavored on the baking sheet as well.  Just make sure its evenly covered.
  • Kale bakes down, so don’t be afraid to use the whole bunch.  I used one whole bunch, shown below, and it filled two bowls. (I made two different flavors)
