Filet Mignon with Cauliflower Hash Browns

Ingredients:
½ head of Cauliflower
1 tsp. Paprika
1 tbsp. Parsley
2 cloves Garlic
3 tbsps. EVOO
4 (6 oz.) Filet Mignon, or beef of choice
Salt & Pepper, to taste

Make:
Break cauliflower into small pieces and mash or place into food processor to break up. 

Heat 2 tbsps. EVOO in large pan, over medium heat.  Once hot, add in pieces of cauliflower, in a single layer.   After about 3-4 mins, cauliflower should start to brown.  Add in salt and garlic and coat cauliflower completely.  Simmer for about 3 to 5 mins, stirring occasionally.  Remove from heat and stir in parsley and paprika.

In a separate pan, heat additional EVOO until hot.  Season beef with salt & pepper.  Sear each side, in the pan, until preferred temperature.

Paleo Spicy Shrimp Fried Rice….Well, ok it’s not really rice.

Ingredients:

1 1/2 lbs. fresh shrimp

2 cloves of garlic

1 head of cauliflower

2 small Habaneros peppers

Trio of bell peppers

Homemade spicy EVOO

Green Chili pepper powder

S&P, to taste.

 

Make:

In a frying pan, heat EVOO and garlic cloves.  Add in shrimp and stir until shrimp is cooked, about 15mins.  Add in Habanero peppers and sprinkle in Chili powder.  Lower heat.

In a separate pan, heat EVOO and add in peppers.  Medium heat.

To make the “Fried Rice”, cut up a head of cauliflower into smaller pieces and put into a food processor.  Process until cauliflower is small and resembles a rice consistency. 

Mix together peppers and shrimp in one pan.  Add more EVOO to the now empty pan and fry up the cauliflower.  (About 5 mins).

Remove from heat and plate.
