CONGRATULATIONS TO THE WINNING GET YOUR GRILL ON PALEO RECIPE:

Ingredients:

 2 lbs of Ground Turkey

 1 Whole Onion

 4-5 or 1/2lb of Bacon Strips

 2 medium Carrots shredded

 1 Tablespoon Cumin

 1 teaspoon Oregano

 1/2 teaspoon Thyme

 Salt & Pepper

Directions:

 Mix together dry ingredients. Then mix in shredded carrots.

 Cook bacon until fully cooked. Pat dry between paper towels then chop.

 Sautee onions until golden. Remove from pan and once cooled dice.

 Mix both bacon and onions together.

 Begin making burgers, and to stuff the inside with bacon and onion mix.  Roll tightly the burger into your hands to remove the air and pat them into a disc shape.

 Barbecue burgers and enjoy!!

Ingredients:
•    6 fresh jalapeno peppers, halved lengthwise and seeded
•    1 (8 ounce) package cream cheese & Colby Cheese
•    12 slices bacon
 
Directions:
·      Preheat an outdoor grill for high heat.
·      Spread & mix Colby Cheese & cream cheese to fill jalapeno halves.
·      Wrap with bacon. Secure with a toothpick.

Second recipe is:   Grilled Bacon Jalapeno Wraps 

 

Ingredients:

•    6 fresh jalapeno peppers, halved lengthwise and seeded

•    1 (8 ounce) package cream cheese & Colby Cheese

•    12 slices bacon

 

Directions:

·      Preheat an outdoor grill for high heat.

·      Spread & mix Colby Cheese & cream cheese to fill jalapeno halves.

·      Wrap with bacon. Secure with a toothpick.

Holy Kale! Grill it or Bake it….

                                        Spicy Cayenne Peppered Kale


Need:  A grill or oven, baking sheet and cooling rack (if you have one)

Ingredients:

Cayenne pepper - start with about 1/4 - 1/2 tsp    IT IS SPICY  :)

Coarse salt, to sprinkle

Garlic powder, to sprinkle

EVOO

Make:

In the Oven:  Take the clean, dry kale and remove it from stem into small bite size pieces.  Place it into a large bowl.  Add enough EVOO so that the kale is lightly covered.  Sprinkle garlic powder and cayenne pepper into the bowl.  Mix thoroughly.

Place the cooling racks over the baking sheets and spread the kale out over it.  (The cooling racks let the heat circulate underneath the kale to keep it from getting soggy.  Also, you don’t need to flip it)

Sprinkle lightly with salt and place into the oven for about 12-15 minutes @ 350°.  Make sure to check the kale around 10 minutes so it doesn’t burn.

Let it cool, then place into a bowl and ENJOY!

THE RESULT…..

On the Grill:  Leave it on the stem and flavor it (same as above) in single whole pieces.  You can crumble it later.  Each piece can then be layed on the top grilling shelf or away from direct heat.  Watch carefully as time will depend on heat of the grill!

TIPS:

  • I use a spray bottle for the EVOO to control the amount used.  
  • Instead of using a bowl and mixing, the kale can be layed out and flavored on the baking sheet as well.  Just make sure its evenly covered.
  • Kale bakes down, so don’t be afraid to use the whole bunch.  I used one whole bunch, shown below, and it filled two bowls. (I made two different flavors)

Calling all garlic lovers! This rub is for you….

                             BLACK PEPPERED BASIL & GARLIC RUB


Need:  A blender/food processor and a love for garlic!


Ingredients:

1/2 tsp freshly ground black pepper

1 tsp coarse salt

1 handful of fresh basil leaves 

2 tbsp EVOO

2 tbsp freshly squeezed lemon juice

2 cloves of garlic, peeled and whole

Make:

Place garlic into the food processor until its minced.  Add in the basil until its chopped up finely.  Then add all the wet ingredients along with the S&P.  Process it for about 30 seconds or until it becomes a well mixed wet rub. It will look like the below… ENJOY!
